Charanda is Mexico's own cane spirit, protected by a denomination of origin in the highlands of Michoacán around Uruapan, and Sol Tarasco is made there by the Pacheco family from estate-grown sugarcane planted above 1,300 meters, which is why it is sometimes labeled a single agricole. Unlike most rum it starts from fresh-pressed cane juice rather than molasses, is twice distilled in pot stills, and here is aged in oak as a blend of one-, two- and three-year-old charanda before the part that gives this bottle its name: a six-month maceration with locally sourced dried mushrooms, identified as Cordyceps sinensis, bits of which can be seen floating in the bottle. The US bottling is 46.5% ABV (93 proof) in a 750ml bottle. VinePair gave it 93 points and found the mushroom leading both nose and palate, a savory, umami-rich profile with light sweetness on the finish; The Daily Pour logged black tea, campfire, earth, iodine, oak, sugarcane and vanilla and was less sure how much of that was the fungus. Either way it is one of the strangest things in the rum aisle, best neat or in an Old Fashioned where the savory edge has room.
