Sonoma Distilling Company is Adam Spiegel's distillery in Rohnert Park, in the heart of Sonoma County, founded in 2010 after he started making spirits with a distiller friend in Santa Rosa in 2008. Everything is done in-house, from milling and mashing through fermentation, distillation, barrel aging, bottling and labeling, on handmade copper alembic pot stills heated by direct fire. The Cherrywood Smoked Bourbon, originally sold as West of Kentucky No. 1, is a wheated bourbon whose mash bill includes roughly 13% malted barley that the distillery smokes itself over local cherrywood before it ever hits the mash tun, so the smoke is distilled into the spirit rather than added later. The rest of the grain is largely California-grown and the whiskey rests at least two years in American oak before bottling at 47.8% ABV (95.6 proof). The producer's own notes call out maraschino cherry, earthy smoke, allspice and vanilla, and it picked up 95 points from Jim Murray's 2018 Whisky Bible. It drinks like a cross between a soft wheater and a lightly smoked single malt, and it makes an unusual Old Fashioned.
