Amo is a 100% Blue Weber agave tequila brand whose plants are grown in the volcanic soil of the Amatitán Valley, the lowland stretch of Jalisco between Tequila and Amatitán, and left in the ground for roughly eight years before harvest. The Extra Añejo is the top of the line: the distilled tequila is rested for at least 48 months, well past the three-year minimum the category requires, in a mix of American and French oak barrels, so the wood influence comes from two directions rather than one. The brand describes the result as medium-bodied with delicate flavors and a balanced aroma, built so the nose and palate line up instead of fighting. Its published notes run to vanilla, caramel, tobacco, maple, dark chocolate, orange, sweet cooked agave and dried fruit on the nose, with a silky palate of tobacco, English mint, orange and dried apple.
