Tequila Ocho is the tequila that introduced vintage and terroir to the category. It was founded in 2008 by Carlos Camarena, the third-generation master distiller behind El Tesoro and Tapatio, and the late Tomas Estes, the London restaurateur who became the European Union's tequila ambassador, and it's made at the Camarena family's La Alteña distillery (NOM 1474) in Arandas, in the Los Altos highlands of Jalisco. Every Ocho release comes from the agave of a single rancho harvested in a single year, and both are printed on the label, so each bottling tastes a little different from the last, the way wine does. This one is from Mesa Colorada, with agave harvested in 2023: slow-cooked in brick ovens, naturally fermented, double distilled, then aged about three years in used American whiskey barrels for the extra añejo, and bottled additive-free at 40% ABV. The used barrels are the point, lending caramel, vanilla, and soft spice without burying the rich cooked agave, pepper, and mineral highland character underneath. Presented in a wooden box, it's a sipping tequila and a collector's bottle.
