Tequila Pasión Reposado is the rested expression from Compañía Tequilera de Arandas, NOM 1460, in the southern Highlands of Jalisco, a Los Altos distillery that also produces The Bad Stuff and Hacienda de Tepa. Like the blanco it starts as 100% blue Weber agave cooked in a high-pressure autoclave, crushed on a roller mill, fermented without fibers in stainless steel tanks with natural spring water, and double distilled in copper pot stills. The difference is the rest: Pasión puts the reposado into French oak barrels rather than the ex-bourbon American oak most budget reposados use, long enough to pull color and a layer of barrel flavor onto the spirit without burying the agave, then bottles it at 40% ABV (80 proof). Tasters on Tequila Matchmaker pick up caramel, butter, vanilla and black pepper over the cooked agave, with oak and a little banana and apple on the nose, and the consensus is that the barrel wakes the tequila up compared with the blanco. It is a mixing reposado first, the kind to keep around for a reposado margarita, a spicy paloma or a tequila old fashioned where the wood notes do some of the work.
