Tequila Plantador Blanco is the Vivanco family's everyday 100% agave Highland tequila from Destilería El Ranchito (NOM 1414) in Arandas, Jalisco, the same distillery that makes their Viva México label, launched by popular demand as a more accessible bottle built with the same estate agave and additive-free method under maestro tequilero Sergio Cruz. Estate-grown Blue Weber agave matured six to eight years is roasted at least 26 hours in brick ovens with culinary steam, crushed on a roller mill, and open-fermented five to eight days in stainless steel with proprietary and Caribbean rum yeasts and deep well water, a process the family calls the "Mozart method" for the classical music played in the fermentation room, then distilled twice in copper pot stills and bottled unaged at 40% ABV with nothing added. Skurnik describes a subtle, mellow nose of cooked agave, roast yam, potato skin, faint strawberry and a hint of cookies and cream, and a palate that is light in texture but intense in flavor, with lime zest, cooked peach, cracked black peppercorn and lemongrass, a classic example of Los Altos tequila. Available in 750ml and one-liter bottles, it is the well tequila for Margaritas, Palomas and Ranch Waters that still holds up neat.
