The Bitter Truth Peach Bitters
Peach bitters were everywhere during cocktail's first golden age in the 19th century — never quite as dominant as orange bitters, but a genuinely common ingredient in classic recipes — before falling out of fashion as tastes streamlined in the 20th century. The Bitter Truth, founded in Germany in 2006 by Stephan Berg and Alexander Hauck, brought the style back using the same classic method behind all their bitters: macerating roots, seeds, bark, fruit, and herbs in an alcohol base, with only a touch of caramel added for color. The nose carries a genuinely natural peach aroma — candied and fresh at once — layered with citrus, a hint of almond, and understated spice. On the palate, that juicy peach character stays front and center, mildly spiced and herbaceous, with a nutty almond note and complex bitter quinine balancing things out through a bright, smooth mid-palate. The finish tails off herbaceous and nutty, with a last bit of fizzy peach lingering behind. It's built to pair with aged spirits — cognac and bourbon — and a few dashes will noticeably elevate a Mint Julep. It also makes an interesting substitute anywhere a recipe calls for orange or citrus bitters.
