The Producer Mezcal launched in the US in September 2021 as a small Oaxacan brand built around named third-generation mezcaleros, and this Tepeztate is made by Celestino Sernas López in Santiago Matatlán, the town at the center of Oaxaca's mezcal trade. Tepeztate is Agave marmorata, a wild maguey that grows on cliffs and rocky slopes and is among the slowest-maturing agaves used for mezcal; the plants here are sourced from the Sierra Sur and harvested at around 16 years on average, with some taking up to 25 years to reach maturity. After roasting, the agave goes through a long 13-day open-air fermentation and is distilled in copper pot stills, with each batch yielding only about 666 bottles. It launched at 40.2% ABV. The brand credits the coastal Sierra Sur terroir for a subtle salinity and dryness in the spirit, and the producer's tasting notes describe aromas of serrano pepper and spice, a palate of minerality, herbs, citrus zest, earth and salinity, and a dry, vegetal finish with jalapeño, white pepper, florals and a soft mineral edge. The Tepeztate is the rarest and most intense bottling in the line.
