Tierra de Ensueño, meaning Land of Dreams, is a collaboration between master distiller Sergio Cruz and master blender Oscar Vázquez Camarena, made at NOM 1580, Hacienda El Olvido, in Jesús María in the southern highlands of Los Altos de Jalisco. This Barrel Rested Blanco is an unusual take on the category: 100% highland Blue Weber agave is cooked in stone brick ovens, crushed on a roller mill, fermented without fibers in open-air stainless steel tanks with deep well water, and double distilled in copper pot stills, then rested for just 14 days in rare ex-bourbon American white oak barrels, which is within the legal limit for a blanco. It is bottled additive-free at 42% ABV (84 proof) in a 750ml bottle.
