Traverse City Straight Bourbon Port Finished
Traverse City Whiskey Co. is the northern Michigan distillery founded by Chris Fredrickson, Jared Rapp and Moti Goldring on whiskey recipes Fredrickson's great-grandfather patented in the 1920s. After several years selling sourced whiskey, the company opened its own Stillhouse in a converted power station in downtown Traverse City, running a 400-gallon custom Kothe still on corn, rye and malted barley from the Midwest. Port Barrel Finish starts with the same straight bourbon as the flagship XXX, a 71% corn, 25% rye, 4% malted barley mash bill aged three years in new charred American oak, then moves it into port wine barrels for an additional year before bottling at 86 proof. It began life as a limited Stillhouse-only release and scored 94 points at the 2016 Ultimate Beverage Challenge before going into wider distribution. The port cask works quietly rather than loudly: Breaking Bourbon's tasting found corn and grain alongside port, dark raspberry and brandy-soaked cherry on the nose, grain, raisin and dark fruit on the palate, and grape and oak on the finish, calling it a more rounded version of the standard bourbon. The distillery suggests it on the rocks or in a Manhattan.
