Traverse City Whiskey Co. is the flagship distillery of northern Michigan, founded in Traverse City by native son Chris Fredrickson with partners Jared Rapp and Moti Goldring. The inspiration was a set of distilling patents Fredrickson's great-grandfather earned during Prohibition, and the company sold whiskey for a few years before opening its own Stillhouse in a former power station downtown, where a 400-gallon custom Kothe still produces up to 800 barrels a year. XXX Straight Bourbon is the whiskey the brand is built on: a mash bill of 71% corn, 25% rye and 4% malted barley from Midwestern grain, aged four years in new charred American white oak and bottled at 86 proof, kosher certified. The 25% rye gives it more spice than a typical wheated or low-rye bourbon without tipping into rye whiskey territory. Breaking Bourbon's review found corn, grain, orange, lemon and cedar on the nose, a sweet palate of lemon, mild cherry and grass, and a vanilla finish with a hint of oak, calling it easy-drinking with no harsh graininess or ethanol bite. It's also the base for the company's cherry and port-finished expressions.
