Tsukinowa Shuzo brews in Iwate Prefecture, northern Japan, following the traditional Nanbu style — and doing a few things few other breweries bother with. Master brewer (toji) Hiroko Yokosawa is one of the rare women holding that role in the industry, and she distills her own kasutori and kome-jochu (rice shochu) in-house specifically to fortify this sake, a genuinely uncommon extra step most brewers skip. Made from locally grown Ginginga rice polished to 50%, soft snowmelt spring water, and a distinctive local yeast strain, the shochu fortification is what gives Midnight Moon its unusual amber color and richer, more complex character than typical clear sake. Bottled around 16.5% ABV. Tasting descriptions vary in an interesting way depending on the source: some find honey, earthy caramel, and subtle floral notes with raspberry, melon, and a touch of sour rice; others describe a more fruit-forward profile of strawberry, peach, blueberry, and even King's Hawaiian sweet roll character, calling it soft, silky, and stylized enough to drink like a competition-grade sake. Serve well chilled in stemware to bring out the aromatics, or in traditional ochoko cups to highlight the sweetness. Excellent with sashimi, nigiri, shellfish, or steamed seafood.
