Doctor Bird is the Jamaican rum program at Two James Spirits in Corktown, Detroit's oldest neighborhood and the city's first licensed distillery since Prohibition. The rum itself is 100% pot still rum from Worthy Park, the cane-to-glass Jamaican estate whose land grant dates to 1670 and whose distillery was rebuilt in 2005, made from the estate's own molasses with the high-ester, funky character Worthy Park is known for. Two James ages it in Jamaica, ships it to Michigan, and finishes it in casks that previously held other spirits and wines; the standard Doctor Bird gets a Moscatel sherry finish at 100 proof, while this bottling went into apple brandy casks and was bottled at full cask strength, 59.2% ABV (118.4 proof), with no sugar added. It's a private cask selected for Del Mesa and Chips Liquor. Rum-X tasters logging the apple brandy finish noted green apple, lime, orange peel, guava, gooseberry, and pineapple alongside the sharp, estery Jamaican edge.
