Vinn Distillery Baijiu is the flagship of the first baijiu distillery in America, founded in 2009 in Wilsonville, Oregon, by Phan Ly, an ethnically Chinese refugee from Vietnam whose family fled the 1978 war, crossed to Hong Kong on a 57-day fishing boat voyage he navigated himself, and was sponsored to Oregon by a Wilsonville church in 1979. Ly built the distillery's pot stills with a welder's help, and after his death in 2012 his wife Kim Trinh, the master distiller, and daughter Michelle Ly carried on with a recipe passed down seven generations. Unlike the sorghum spirits that dominate China, this is a rice aroma baijiu, the only one made in the United States: non-GMO Calrose brown rice from northern California, water and a 100% rice-based qu starter culture, fermented about six months in parallel fermentation where saccharification and fermentation happen together, twice distilled in Ly's pot stills, rested at least a year in stainless steel and bottled non-chill filtered at 40% ABV. The distillery describes roasted peanut skin, milk chocolate and jasmine tea on the nose, a creamy palate of toasted rice, peanut and concord grape, and a clean, nutty finish.
