Vinn Distillery Baijiu 99 is the high-proof, cocktail-focused bottling from Vinn Distillery in Wilsonville, Oregon, the first and only baijiu distillery in America. Vinn was founded in 2009 by Phan Ly, an ethnically Chinese refugee from Vietnam who navigated his family's fishing boat to Hong Kong in 1979 and was sponsored to Oregon by a local church; he built the pot stills himself, and since his death in 2012 his wife and master distiller Kim Trinh and daughter Michelle Ly have run production from a family recipe seven generations old. Where most baijiu is made from sorghum, Vinn's is rice aroma style: this one uses non-GMO Calrose white rice from northern California, water and a 100% rice-based qu starter, fermented for three months in parallel fermentation, twice distilled in Ly's pot stills and bottled unaged, unfiltered and non-chill filtered at 49.5% ABV (99 proof) in a 750ml bottle. The distillery describes a savory nose of oyster mushroom, toasted almond, grilled pork and soy sauce, with sunflower seed, peanut butter, millet and a hint of banana pudding on the palate, and built it specifically for bartenders, with enough punch to carry through any cocktail.
