Vinn Distillery Baijiu Family Reserve is the longest-rested, highest-proof baijiu from Vinn Distillery in Wilsonville, Oregon, founded in 2009 as the first baijiu distillery in America and still the only one in the country. Phan Ly, an ethnically Chinese distiller from Quang Ninh Province, North Vietnam, fled the 1978 war with his family, navigated a 57-day fishing boat voyage to Hong Kong, and was sponsored to Oregon by Wilsonville's Frog Pond Church in 1979; years later, frustrated that his Chinese restaurant could offer customers only Tsingtao, he built pot stills and started distilling. After his death in 2012 his wife, master distiller Kim Trinh, and daughter Michelle Ly carried on with the recipe handed down seven generations. All Vinn baijiu is rice aroma style, made from non-GMO northern California rice, water and a rice-based qu starter, fermented in parallel for months and pot distilled. The Family Reserve is rested for more than three years before bottling, the longest in the lineup, and comes out at 53% ABV (106 proof) in a 750ml bottle; the distillery describes it as softer and smoother than the younger expressions, with a nutty, earthy character that suits sipping neat.
