Volans Blanco is made at El Pandillo, NOM 1579, in Jesús María in the southern Los Altos highlands of Jalisco, by master distiller Felipe J. Camarena, with the brand owned by the Camarena family and the Allen family of Idaho's Three Rivers Ranch, Chad and Cristina Allen. El Pandillo is a reference distillery for additive-free highland tequila, and Volans follows the house method: 100% blue Weber agave cooked slowly in stone and brick ovens, crushed on a tahona stone wheel, fermented in open stainless steel tanks without fibers using a mix of deep well water, natural spring water and rainwater collected on site, and twice distilled in copper pot stills, with aeration before bottling at 40% ABV. On Tequila Matchmaker more than 900 ratings average in the high 80s, and it took Gold at the 2025 Agavos Awards; the most-logged notes are cooked agave, minerals, citrus, vegetal greenness and black pepper, with mint and florals turning up often, and reviewers repeatedly call it a clean, balanced expression of the El Pandillo personality, earthy and mineral with the agave front and center. It sips neat without rough edges and makes a far better margarita than most blancos at the price.
