West Cork Irish Whiskey comes from West Cork Distillers in Skibbereen, the largest wholly Irish-owned distillery in the country, founded in 2003 by food scientist John O'Connell and deep-sea fishermen Denis and Ger McCarthy. The distillery uses only Irish-grown grain and barley, local spring water and copper pot stills, and has built a reputation for inventive cask finishes alongside its classic bottlings.
In the glass it shows a warm golden hue with honey, vanilla and toasted oak on the nose, complemented by hints of citrus and spice. The palate is complex and well balanced, moving from caramel and dried fruit to gentle floral undertones, with a smooth, warming finish. It drinks well neat or with a splash of water.
