Woodinville's Barrel-Finished Maple Old Fashioned is the distillery's take on the bottled cocktail, and it's built the way you'd hope: Woodinville Straight Bourbon, real maple syrup, and orange bitters, batched and then put back into a freshly emptied Woodinville bourbon barrel to finish. That barrel rest is the whole point. It marries the maple into the whiskey instead of leaving it sitting on top, and adds a layer of toasted oak and vanilla you don't get from stirring one up at home. The base bourbon is the one that made Woodinville's name: founded in 2010 by Orlin Sorensen and Brett Carlile with the late David Pickerell (formerly of Maker's Mark) as their guide, the distillery grows its grain on the Omlin family farm in Quincy and ages in Central Washington's hot summers and cold winters; Moët Hennessy owns it today. The cocktail is bottled at 80 proof (40% ABV). Expect maple and orange zest up front, a bourbon-forward middle of caramel, vanilla, toasted oak, and baking spice, and a warm finish turned slightly dry by the bitters.
