Woodinville Straight Bourbon Finished in Port Casks is the Washington distillery's flagship bourbon given a second rest in ruby Port casks, first released in early 2020 as a Washington-only bottling. Woodinville Whiskey Company was founded in 2010 by Orlin Sorensen and Brett Carlile in Woodinville, Washington, and has been part of Moët Hennessy since 2017. The base is the standard recipe, 72% corn, 22% rye and 6% malted barley grown by the Omlin family in Quincy, Washington, mashed and distilled in Woodinville, then aged at least five years in heavily charred new oak in the company's private barrel houses in central Washington. The finished bourbon then spends about six more months in ruby Port casks and is bottled at 90 proof. Breaking Bourbon described it as mahogany in the glass, with juicy grape, dark fruit, vanilla and rich oak on the nose, a palate that mixes light and dark fruit with caramel and oak and balances sweet against dry, and a finish of fleeting grape, dry oak and slight tannin. The Port deepens an already fruit-forward bourbon; a good after-dinner pour.
