Wuliangye is the strong-aroma baijiu of Yibin, Sichuan, made by Wuliangye Yibin Company, the state enterprise formed in 1950 from eight of the city's distilleries and as of 2023 the second most valuable spirits brand in the world. The name means five grains, and the recipe is 36% sorghum, 22% rice, 18% glutinous rice, 16% wheat and 16% corn, fermented in mud pits, some of which the Chen family dug in 1368 and which are still in use, so that the long fermentation builds the heavy ester load that defines the nongxiang style. The Crystal bottling is the flagship presentation in the clear faceted bottle, a no-age-statement baijiu at 52% ABV (104 proof), the strength most Chinese drinkers consider the classic Wuliangye expression, and the one poured at banquets and given as a gift across the country. The spirit was given its current name in 1909 by Yang Huiquan, though the multi-grain spirits of Yibin go back through the Ming and Song dynasties, and the brand's premium tiers are still drawn from the Ming-era pits. Serve it at room temperature in small cups alongside Sichuan food, where its intensity and sweetness stand up to chili and numbing pepper.
