XiFeng Jiu Baijiu 110 Proof
This is the 55% ABV (110 proof) bottling of Xifengjiu, the baijiu of Fengxiang in Baoji, Shaanxi, made by Shaanxi Xifengjiu Co., the company formed in 1956 when the town's distilleries were nationalized and combined, and the only producer of the feng-flavor, or phoenix-aroma, style, which blends traits of strong-aroma and light-aroma baijiu. The spirit's lineage runs about 4,000 years; it was renamed fengxiang in 757 during the Tang dynasty, and in 1952 it was named one of China's Four Famous Spirits. Sorghum is the base grain, steamed and fermented with a barley-and-pea daqu in mud pits for only about ten days, with the pit mud replaced every year rather than built up over decades. After distillation the spirit ages in jiuhai, rattan baskets lined with hemp paper and cloth sealed with vegetable oil, beeswax and pig's blood. High levels of ethyl acetate and ethyl hexanoate give it tart apple and cherry on the nose and earthy honey on the palate. At 55% it is the traditional full-strength expression, meant for small cups at the table.
