Yellow Rose Harris County Bourbon Whiskey
Yellow Rose Harris County Bourbon is made by Yellow Rose Distilling in Houston, the first legal whiskey distillery in the city since Prohibition, founded in 2010 by Ryan Baird, Troy Smith and Ryan Whitaker and named for Emily West, the "Yellow Rose of Texas"; this bottling is named for the distillery's home county. Harris County is a high-rye bourbon built entirely from Texas-grown grain: 25% of the mash bill is Texas rye and the rest is Texas corn and malted barley. It is double pot distilled, entered into the barrel at a low proof, and matured about 30 months in Houston heat and humidity, which pushes the whiskey in and out of the wood far faster than a Kentucky rickhouse would, before bottling at 92 proof (46% ABV). The distillery's published notes describe brown sugar, cherry, fruit-wood smoke, toasted pecan and tobacco on the nose, brown sugar and cinnamon, pecan pie, toasted coconut, black tea and peanuts on the palate, and a finish that stays sweet throughout and ends with a burst of cinnamon candy. Head distiller Houston Farris wanted an underlying sweetness beneath the usual high-rye spice.
