Yellowstone Special Finishes Collection 'Toasted' Bourbon Whiskey

Yellowstone Toasted is the first release in the Special Finishes Collection from Limestone Branch Distillery in Lebanon, Kentucky, launched in October 2023 as a permanent member of the Yellowstone family alongside Select and the annual Limited Editions. Limestone Branch was opened by brothers Stephen and Paul Beam, seventh-generation distillers, who reacquired the Yellowstone brand, founded in 1872 by their great-great-grandfather J.W. Dant, in 2015. Toasted starts with Yellowstone's traditional bourbon mash bill aged four years, then master distiller Stephen Beam finishes it with a combination of five different toasted staves he hand-selected: high toast, American oak double-toast, vanilla, rick house and spice rack. Beam began experimenting with toasted barrels in 2016, and that work shaped which staves to use and in what proportion. It is bottled at 100 proof (50% ABV) in the standard Yellowstone bottle with the Roosevelt Arch artwork, a Special Finishes Collection call-out and a brown top wrap. The producer's published notes describe toasted caramel and vanilla with hints of fall spices and cinnamon on the nose, a medium body with walnut, toffee, black tea and white pepper, and a crisp finish of cocoa, tobacco and oak.
