El Dorado is the rum that introduced most of the world to Demerara, and it's made on equipment nobody else has: the last wooden stills on earth, all running at one distillery in Guyana. About El Dorado and the Diamond Distillery

El Dorado is made by Demerara Distillers Limited (DDL) at Plantation Diamond on the Demerara River, the last operating distillery in Guyana. As the country's other sugar-estate distilleries closed through the late 20th century, DDL moved their stills to Diamond and kept them running. Three of them are irreplaceable: the Port Mourant double wooden pot still, from an estate founded in 1732 and usually called the oldest working still in the world; the Versailles single wooden pot still, dating to the 18th century; and the Enmore wooden Coffey still, built in 1880 and the last wooden continuous still anywhere. Alongside them run a French Savalle four-column still and modern Coffey columns.

Each still has its own "mark" (PM for Port Mourant, VSG for Versailles, EHP for Enmore, ICBU for the Savalle), and the El Dorado age-statement range is built by blending them. The wooden stills are where the signature comes from: dense, oily, licorice-and-molasses character with a smoky edge that no copper still produces. All of it is aged in ex-bourbon oak in Guyana's tropical climate, where the angel's share runs far higher than in Scotland or Kentucky.

The 2020 Reformulation

For years El Dorado's biggest knock among rum enthusiasts was added sugar. Independent hydrometer tests on the 12, 15, and 21 estimated 20 to 40 grams per liter. Starting in 2020, DDL reformulated the range with the added sugar removed or sharply reduced, and enthusiast tastings of the new bottlings describe a drier rum with more wood and pepper where the old caramel sweetness used to be. If you tried El Dorado years ago and found it syrupy, the current bottles are a different rum.

El Dorado Rum in Stock at Chips Liquor

El Dorado 3 Year

The white. Savalle column rum aged a minimum of three years in ex-bourbon oak, then charcoal-filtered to remove the color, at 40% ABV. One of the few white rums with real age behind it at a working price. For Daiquiris and Mojitos with some body.

El Dorado 5 Year

The everyday gold: mostly column rum with a touch of wooden-still distillate, aged a minimum of five years, 40% ABV. A bar staple for Dark 'n' Stormys and rum punch.

El Dorado 8 Year

The dark horse. A blend from the Enmore wooden Coffey still, the Port Mourant pot still, and the Savalle columns, aged at least eight years, 40% ABV. Heavier and funkier than the 5 and 12, and the value play for anyone who wants the wooden-still character without the 12's price.

El Dorado 12 Year

The reference Demerara rum and the bottle that built the brand. Enmore, Port Mourant, and Savalle rums aged a minimum of twelve years, 40% ABV. If you only know one El Dorado, it's this one.

El Dorado 15 Year

The sipper of the core range. A blend from the Enmore and Diamond Coffey stills plus the Port Mourant and Versailles wooden pot stills, with some components as old as 25 years, aged a minimum of fifteen years and bottled at 43% ABV. Reviewers who measured the post-2020 bottling found zero added sugar.

El Dorado 21 Year

Every drop at least 21 years old, from the three wooden stills, bottled at 43% ABV. Drier, oakier, and smokier than the 12 and 15. A slow sipper for a cigar or a nightcap.

El Dorado Special Reserve 25 Year

The halo bottle: a quarter-century of tropical aging on wooden-still rum, released in numbered vintages at 43% ABV in a wooden presentation box. At this age the oak dominates, and it's priced as a collector's bottle.

The Single Still Series

El Dorado's single-still releases bottle each heritage still on its own instead of blending them. Single Still Enmore is the 12-year EHP marque at 40%. The three cask-strength versions are where the series gets serious, all 12 years in ex-bourbon oak in Guyana, non-chill-filtered, natural color, no additives, bottled around 54% to 57% depending on batch:

  • Port Mourant Cask Strength 12 Year: the most famous still in rum on its own. Dense, oily, licorice-driven. Reviewers consistently rank it first of the three.
  • Enmore Cask Strength 12 Year: the wooden Coffey still at full proof. Woodier and drier, often compared to bourbon, and the pick for tasters who find Port Mourant too extreme.
  • Versailles Cask Strength 12 Year: the single wooden pot still, smokier and leaner than Port Mourant. The three genuinely divide people, which is the point of bottling them separately.

El Dorado High Ester Blend PM/DHE

Launched in 2024 as part of a series of nine, this pairs Port Mourant rum with Diamond High Ester, a long-fermented, pungent spirit Guyanese drinkers previously knew only from a locally sold product. Dry, funky, and bottled above the core range's proof. It's DDL's answer to Jamaican funk, and the funkiest thing the distillery has ever released under its own name.

El Dorado Rum Cream

Aged Demerara rum blended with dairy cream, vanilla, and spice at 16.5% ABV. Over ice or in coffee.

Which El Dorado to Buy

  • Cocktails: 5 Year for mixing, 8 Year for tiki drinks that want weight.

  • Best sipper for the money: 15 Year.
  • Rum enthusiast: Port Mourant Cask Strength, or all three single stills side by side.
