Alma del Jaguar Nocturna is the brand's seasonal high-proof blanco, released in spring and fall batches and named for the nocturnal jaguar the company works to protect through donations to the Northern Jaguar Project. It is made at NOM 1414, Feliciano Vivanco y Asociados in Arandas, Los Altos de Jalisco, by master distiller Sergio Cruz, from estate Blue Weber agave grown at about 6,800 feet in iron-rich volcanic soil. Unlike the standard blanco, Nocturna is fermented with 100% wild airborne yeast in open-air tanks with agave fibers, giving it a bolder, more savory profile. The agave is cooked in brick ovens, roller-milled, double distilled in small copper pot stills and bottled unfiltered, certified additive-free, at 50.5% ABV (101 proof) in a 750ml recycled-glass bottle. Bourbon Banter describes a nose of caramelized, long-cooked agave with roasted bell pepper, charred herbs, peppermint, oregano and petrichor, a palate that opens with lemon peel and builds white pepper toward baked-bread notes from the fiber fermentation, and a warm, dry, tingly, mineral-heavy finish.
