Cayéya Single Barrel Reposado is a 100 percent blue Weber agave tequila from NOM 1424 in the Jalisco valley that pushes the reposado category right to its limit: nine months in meticulously re-charred American oak barrels followed by roughly two and a half months in French wine casks, eleven and a half months in all, two weeks short of being an añejo, and bottled one barrel at a time so no two batches are identical. The base spirit is the same as the Blanco, agave cooked in stone and brick ovens, roller milled, fermented in stainless steel without fibers and twice distilled, bottled at 40% ABV in Cayéya's heavy embossed glass, this time in deep amber with a cork stopper and the wolf-head hang tag. The producer describes toasted vanilla, caramel, toffee and butterscotch on the nose with dried flowers and spice from the French oak, a creamy palate of vanilla, rich caramel, toasted coconut, a hint of smoke and gentle cinnamon, nutmeg and clove, and a long, velvety finish of vanilla, caramel and dark chocolate with a return of warm spice.
