Clairin Casimir is the most floral, fruit-forward, and arguably most beloved expression in Velier's legendary Spirit of Haiti series — the one that most consistently wins over new Clairin converts and leaves experienced rum drinkers genuinely stunned by its complexity. Produced by second-generation distiller Faubert Casimir at his family's distillery in the remote village of Baradères — about 130 miles west of Port-au-Prince — this is a clairin with a genuinely unique production signature. Casimir grows approximately 120 acres of Hawaii Red and Hawaii White sugarcane on his 50-hectare property, fermenting the fresh juice in five 800-gallon mango wood vats with spontaneous wild yeasts — and in the Baradères tradition, adding lemongrass leaves, cinnamon, citronella, and ginger to certain fermentation batches, thought to alter pH and improve fermentation efficiency. Distilled in a copper pot still with six plates and bottled without filtration, dilution, or additives. The nose delivers a boldly pleasant lemongrass note with hints of ginger, herbaceous vanilla, strawberry jam, overripe banana, and brown butter — described by one reviewer as "Kerpow!
