    Haiti makes two very different cane spirits. Rhum Barbancourt is the polished one: double-distilled from cane juice in Port-au-Prince since 1862 and aged in French Limousin oak, with the 8 Year Réserve Spéciale and 15 Year Estate Réserve as the sipping benchmarks. Clairin is the raw one. It's made at hundreds of small village distilleries from wild cane and sugar syrup, fermented with wild yeast, and run through small pot stills, bottled unaged and usually at still strength.
