Clairin Le Rocher is the most spiritually grounded and production-unique expression in Velier's legendary Spirit of Haiti series — and the one that most consistently surprises drinkers expecting something similar to its more famous siblings. Produced by Bethel Romelus at his distillery in Pignon — built on a rock and named after Matthew 7:24-27, the Gospel passage about the wise man who builds his house on rock rather than sand — Le Rocher stands apart from Sajous, Casimir, and Vaval in one critical way: where the others distill fresh sugarcane juice, Le Rocher uses sugarcane syrup — juice that is first boiled down to concentrate the sugars before fermentation. During fermentation, a portion of dunder from previous distillations is added, creating a process more commonly associated with Jamaican rum than Haitian clairin and giving Le Rocher a uniquely smoky, earthy, and savory character unlike any of its counterparts. Three varieties of hand-harvested sugarcane are processed through a pot still and bottled at still strength without filtration or reduction.
