Clairin Sonson is the most audacious and polarizing expression in Velier's legendary Spirit of Haiti series — and the rum that serious enthusiasts describe as requiring courage to make and fortitude to drink. Introduced in 2018 as the fifth single-estate clairin in the Velier stable, Sonson is produced by Stephan Kalil Saoud at the tiny one-pot-still distillery in Cabaret, a village north of Port-au-Prince, using the local Madame Meuze sugarcane variety — pressed into juice, reduced to syrup, spontaneously fermented with wild yeasts, and distilled over an open fire in a single copper pot still. No filtration, no dilution, no additives — bottled at still strength at 53.2% ABV exactly as it comes off the still. The current Cabernet-Haiti vintage is named for the sugarcane varieties unique to the region.
