Cleveland Whiskey calls itself a technology company that happens to make whiskey, and founder Tom Lix — a serial tech entrepreneur who set up shop inside a Cleveland manufacturing incubator in 2009 — cheerfully admits the industry considers him a heretic. The reason is pressure aging. Whiskey is distilled the traditional way and briefly aged in new charred oak, then moved into stainless steel tanks with wood cut into chunks, where alternating pressure cycles force the spirit in and out of the wood like a sponge in a bucket — compressing years of seasonal barrel breathing into about a week. Purists have real objections and Lix has real medals: over 60 at international competitions, including 22 gold and double gold. The Underground line is where the technology gets interesting rather than merely fast. Because the wood doesn't need to be watertight or barrel-shaped, Cleveland can finish bourbon on species no cooper could ever build a cask from — black cherry, apple, sugar maple, hickory, and honey locust — each imparting flavors that traditional oak aging simply can't produce. Black cherry brings a subtle tartness over vanilla and toffee; sugar maple runs sweeter; hickory turns smoky and savory. The spent wood even gets a second life as bourbon-infused SmokerBricx for grilling. Love it or argue with it, there's nothing else like it.
