Cleveland Underground Black Cherry Full Proof is the uncut version of the Ohio company's most popular wood finish. Cleveland Whiskey, founded by Tom Lix in 2009, matures bourbon with a pressure-aging process: young whiskey goes into pressure-capable stainless steel tanks with cut wood, and the pressure is cycled to push the spirit in and out of the wood, doing in days what barrels do in years. Underground uses that technology to finish bourbon with woods that can never be made into a leak-proof barrel, and black cherry is the one that stuck. The bourbon, from a mash bill of 75% corn, 21% rye and 4% malted barley, is aged in new charred oak first, then pressure-finished with large chunks of black cherry wood, and bottled non-chill filtered at full proof, 115 proof (57.5% ABV), with no added sugar, artificial flavor or preservatives. Cleveland describes vanilla, caramelized cherries and tobacco on the nose, sugar cookie developing into smoked cherries jubilee and cinnamon red hots, and a slow, rich, spicy finish. The 94-proof version of this whiskey took a Platinum at the SIP Awards and a Double Gold in San Francisco; this is the same bourbon with nothing held back.
