Cleveland Underground Black Cherry Wood Finished Rye Whiskey is part of the Underground series from Cleveland Whiskey, the Ohio distillery known for experimenting with unusual finishing woods. The base is a rye whiskey made from a 95% rye and 5% malted barley mash bill, and after its initial aging it spends less than six months in contact with black cherry wood before bottling at 90 proof.
Cleveland Whiskey's approach is built around pressure and wood contact rather than long years in a warehouse, and the Underground line applies that method to a range of woods including hickory, sugar maple and apple. The black cherry finish is meant to layer fruit and a touch of sweetness over the peppery, grain-forward character of a high-rye whiskey. It is an easy way to try something a little different in an Old Fashioned or a Manhattan, or to compare side by side with the other Underground finishes.
