Normandin-Mercier Prestige is the house's XO-level Fine Champagne, a blend of eaux-de-vie from Grande Champagne and Petite Champagne, the two premier crus of Cognac, aged roughly 15 years in French oak. The firm was founded in 1872 by Jules Normandin, who named it for his wife's Mercier family and in 1885 purchased the Chateau de la Peraudiere at Dompierre-sur-Mer near La Rochelle, where the Atlantic-influenced climate and damp cellars still mature every cask. Normandin-Mercier owns no vines and buys only from Grande and Petite Champagne growers; dormant as a brand after the Second World War, it was revived under the family name in 1979 by Jean-Marie Normandin and is now run with his children Edouard and Audrey. Distilled from Ugni Blanc and bottled at 40% ABV in a 750ml bottle, Prestige is described by the producer as nuanced and complex, opening floral before shifting to vanilla and honey, with a relatively dry palate where cocoa and leather give way to ginger spice and hints of tropical fruit. Cognatheque adds almond, plum and spice on the nose and a long, smooth finish. A refined after-dinner cognac at a fraction of big-house XO pricing.
