Clairin is Haiti's native cane spirit: fresh sugarcane juice or syrup from old, non-hybrid cane varieties, fermented spontaneously with wild yeast and run through small pot stills, unaged and unfiltered, made by upwards of 500 village micro-distilleries across the country. The Italian bottler Velier, under Luca Gargano, began bringing single-distillery clairins to the world market in the 2010s, and Clairin Communal is the blend: four of those distilleries in one bottle. It combines Clairin Sajous from Saint-Michel-de-l'Attalaye, Clairin Casimir from Barradères, Clairin Vaval from Fritz Vaval's Arawaks distillery in Cavaillon, and Clairin Le Rocher from Bethel Romelus in Pignon, each made from cane grown without pesticides or artificial fertilizer, wild-fermented and distilled over open fire. Unlike the single-village bottlings, which come out at still strength in the high 40s and 50s, Communal is brought down to 43% ABV, which is the point: it is the approachable one, the clairin for daiquiris, ti' punch and beer chasers as much as for sipping. Reviewers find grassy cane juice, lime zest, banana, green olive and white pepper, with a sharp, fruity, peppery finish. The easiest way into clairin, and the cheapest.
