Clairin Le Rocher Pignon-Haiti Rum
Clairin Le Rocher is made by Bethel Romelus at his distillery in Pignon, an inland commune in Haiti's north, and it is the odd one out in Velier's Spirit of Haiti range. Where Sajous, Casimir and Vaval distill fresh cane juice, Romelus boils juice from three local cane varieties, Madame Meuze, Canne Blanche and Pete Coca, down to a syrup, then ferments it in the grand arôme tradition, adding dunder from previous distillations back into the wash. The result is heavier, richer, smokier and more savory than its siblings, closer to a high-ester Jamaican rum than to a fresh-cane agricole. It is single pot distilled and bottled at still strength with no dilution, filtration or additives; the strength varies by harvest, with recent batches around 46 to 47% ABV. The name is a biblical reference, the wise man who built his house on rock; the label art is a painting from the Hotel Florita in Jacmel. Velier describes it as opulent and singular, with heavy richness and an intriguing smoky sweetness. Le Rocher was the fourth clairin added to the range after the original three, and if you like funky, high-ester Jamaican rum it is the one to start with.
