Clairin Vaval Cavaillon-Haiti Rum
Clairin Vaval is made by Fritz Vaval at Distillerie Arawaks in Cavaillon, a coastal village in southern Haiti near Les Cayes, where his family has been distilling since 1947. Vaval farms 20 hectares of Madame Meuze cane without chemical fertilizer or pesticides; the cane is cut by hand and pressed immediately, the fresh juice is fermented with ambient wild yeast, and the wash is run through a small pot still that Vaval built himself, driven by a steam engine salvaged from an old locomotive. It is bottled in partnership with Velier's Spirit of Haiti project at still strength, with no dilution or additives; the strength varies by harvest, with recent batches around 48 to 49% ABV. Of the original three clairins Velier brought to market, Vaval is the coastal one, and the producer's own description leans on that: aromatics of salty sea air, beach sand and rich botanicals, fresh and balanced on the palate. Reviewers tend to find it the fruitiest and most exuberant of the range. Drink it neat, or in a ti' punch with lime and cane syrup.
