Master Distiller Chris Fletcher selected barrels from the upper floors of the barrelhouses, then moved them to the lower floors to slow the aging and preserve balance, a technique the distillery calls its whiskey management process. It is bottled at 97 proof.
Ten years in new charred oak transforms the familiar Jack Daniel's profile. The banana and vanilla of Old No. 7 deepen into rich caramel, toasted oak, dark fruit, leather and baking spice, with the charcoal mellowing keeping it round and smooth even at the higher proof. It is released in small annual batches, each with a batch number on the label, and has become one of the most sought-after mainstream Tennessee whiskeys.
