    Jasper Newton "Jack" Daniel learned to distill as a teenager under Nathan "Nearest" Green, an enslaved African American master distiller working for lay preacher Dan Call — and Green is now recognized as the first known Black master distiller in America, hired by Jack as his first head distiller after emancipation. What Green taught him was the Lincoln County Process, the sugar maple charcoal mellowing that separates Tennessee whiskey from bourbon. Every drop of Old No. 7 still goes through it: newly distilled whiskey trickles a gallon a minute through 72 vats of ten-foot-deep charcoal over three days before it ever touches a barrel. Jack registered his distillery in Lynchburg in 1866, making it the oldest registered distillery in the United States, and built it around Cave Spring Hollow — iron-free limestone spring water that runs a constant 56 degrees. He made the brand's name at the 1904 St. Louis World's Fair, where Old No. 7 won gold.
