M&H Apex Single Cask STR 2018-0838 is a single cask release from Milk & Honey, Israel's first whisky distillery, founded in Tel Aviv in 2014 with guidance from the late Dr. Jim Swan, the legendary whisky consultant behind Kavalan and Kilchoman. Swan pioneered the STR cask, a red wine barrel that is Shaved, Toasted and Re-charred to give young whisky rich toasted oak and red fruit notes, and this cask was filled in 2018 and bottled at three years old at cask strength, 57.8% ABV, in a 750ml bottle.
Tel Aviv's heat matures whisky roughly three times faster than Scotland, so three years here delivers a deep, layered dram: toasted oak, red berries and cherry, vanilla and baking spice over M&H's fruity malt, with a long, warming finish. Single cask M&H is bottled in tiny numbers and rarely seen in the U.S.
