M&H — Milk & Honey, named for the biblical "land of milk and honey" — is Israel's first whisky distillery, founded in Tel Aviv in 2013 by a group of entrepreneurs led by Gal Kalkshtein, with production beginning in 2015 and Israel's first-ever single malt released in May 2017. The distillery was built with guidance from the late Dr. Jim Swan, the legendary consultant behind Kavalan, Kilchoman, and a dozen other new-world distilleries, whose specialty was exactly this: making excellent whisky in hot climates. Tel Aviv's heat matures spirit dramatically faster than Scotland's, driving deep wood influence, spice, and concentration at a young age, and M&H turned the country itself into what it calls a "climate playground" — sending casks to mature by the Dead Sea, up in the Golan Heights, and along the Mediterranean coast to see how each location reshapes the spirit. Everything is kosher, non-chill filtered, and natural color. The proof arrived fast: Elements Sherry Cask, the first single malt ever matured in kosher-seasoned Jerez sherry casks, was named World's Best Single Malt at the 2023 World Whiskies Awards, following Whisky Magazine naming M&H the world's Best Craft Distillery in 2021.
