M&H Apex Cognac Cask Small Batch #007 comes from Milk & Honey, Israel's first whisky distillery, founded in Tel Aviv in 2014 with the guidance of the late Dr. Jim Swan. The Apex series is M&H's line of cask-strength, limited experiments, and this batch begins with a vatting of ex-bourbon and STR red wine casks, then finishes in 400-liter French Limousin oak casks that previously held fine Cognac. Bottled at three years old and 58.8% ABV, non chill-filtered, in a 750ml bottle.
Tel Aviv's heat accelerates maturation dramatically, and the Cognac casks add layers of dried apricot, grape, honey and gentle French oak spice over the distillery's fruity malt, with vanilla from the bourbon wood and a long, warming finish. It is a rich, unusual whisky and a rare find in the U.S. for collectors of world whisky.
