Novo Fogo is the cachaça that put Brazil's national spirit on serious American back bars. Founded in 2010 by Dragos Axinte, it's made at a small distillery in Morretes, in the state of Paraná, tucked into a pocket of Atlantic rainforest where the sugarcane is grown organically on the estate and cut by hand. The fresh cane juice ferments with natural yeast and is distilled once in a copper pot still, and the whole operation is certified USDA organic and carbon negative, with a share of every case funding the brand's Un-Endangered Forest reforestation project. Passion Fruit Cachaça started as a collaboration with the electronic duo SOFI TUKKER and became a permanent part of the line. It's the organic Silver cachaça infused with passion fruit, orange peel, vanilla, pure cane sugar, and a touch of oak from the distillery's barrels, bottled at 40% ABV. The result is bright and tart rather than syrupy, with the passion fruit leading and the vanilla and orange rounding it out. It's a shortcut to a maracujá caipirinha with nothing but lime, and it works over ice with soda or in a spritz.
