Novo Fogo is the cachaça that put Brazil's national spirit on serious American back bars. Founded in 2010 by Dragos Axinte, it's made at a small distillery in Morretes, in the state of Paraná, tucked into a pocket of Atlantic rainforest a few miles from the coast. The sugarcane is grown organically on the estate and cut by hand, the fresh juice ferments with natural yeast, and the spirit is distilled once in a copper pot still, the way cachaça has been made in the region for generations. The whole operation is certified USDA organic and carbon negative: bottles are made from recycled glass, the neck wraps are made from plastic pulled off the streets of São Paulo, and a share of every case sold funds the Un-Endangered Forest project, which is working to take 36 threatened Brazilian tree species off the endangered list. The range starts with the unaged Silver, in a standard bottle or as the 43% Bar Strength liter, and moves through the barrel-aged Chameleon, the older Barrel-Aged and Single Barrel releases matured in charred American oak, and the Two-Woods series (Tanager, Colibri, Graciosa) that finish the cachaça in casks made from native Brazilian hardwoods like zebrawood, brazilwood, and amburana. There's also a Passion Fruit infusion made with the Silver for instant maracujá caipirinhas. Everything is built for cocktails first, but the aged bottles drink like good rum, neat.
