Père Labat is the rhum of Distillerie Poisson on Marie-Galante, the small, flat, windmill-dotted island off Guadeloupe that many agricole drinkers consider the purest expression of French Caribbean cane. The distillery was founded in 1916 by Édouard Rameau and named for Père Jean-Baptiste Labat, the Dominican friar who modernized rum distillation in the French Antilles around 1700. Cane is cut by hand, crushed within hours, fermented slowly on fresh juice, and run through a red-copper Creole column. This is the entry point to the range: an unaged rhum agricole blanc brought down to 40% ABV in a full liter bottle. Marie-Galante whites are famous for their intensity, and even at 40% this one is all fresh-pressed cane, green herbs, and a little pepper, with the grassy, slightly funky edge that separates agricole from molasses rum.
