Père Labat is the rhum of Distillerie Poisson on Marie-Galante, the small, flat, windmill-dotted island off Guadeloupe that many agricole drinkers consider the purest expression of French Caribbean cane. The distillery was founded in 1916 by Édouard Rameau and named for Père Jean-Baptiste Labat, the Dominican friar who modernized rum distillation in the French Antilles around 1700. Cane is cut by hand, crushed within hours, fermented slowly on fresh juice, and run through a red-copper Creole column. Les Mangles is a single-plot bottling from one parcel of purple cane on the north side of the Poisson estate, a spot that gets the best sun and wind on the property. The cane is cut by hand, fermented for around 80 hours on fresh juice, and distilled in the Creole column, and this release is bottled at full still strength, 71% ABV, with no reduction. Expect concentrated green cane, mango and papaya, fresh herbs, and a spicy, chili-like heat that lingers. Limited and numbered.
