Novo Fogo is the cachaça that put Brazil's national spirit on serious American back bars. Founded in 2010 by Dragos Axinte, it's made at a small distillery in Morretes, in the state of Paraná, tucked into a pocket of Atlantic rainforest where the sugarcane is grown organically on the estate and cut by hand. The fresh cane juice ferments with natural yeast and is distilled once in a copper pot still, and the whole operation is certified USDA organic and carbon negative, with a share of every case funding the brand's Un-Endangered Forest reforestation project. Bar Strength is the Silver cachaça dialed up to 43% ABV and packed into a full liter, built specifically for bartenders who wanted the spirit to punch harder through a cocktail. It's the same unaged, rainforest-grown cane spirit as the standard Silver, rested in stainless steel, with the same grassy, tropical character: banana, passion fruit, lime blossom, sweet red pepper, and a saline snap on the finish. The extra proof keeps it from getting lost in a caipirinha, a daiquiri riff, or a tiki build, and the liter format means fewer trips to the shelf.
