Destilería Serrallés has made rum in Ponce, on Puerto Rico's south coast, since 1865, six generations of one family, and its Serrallés Collection is where the house shows what it can do beyond the 40% bar-well bottles: the Double Cask Cognac is a blend of single- and multi-column molasses rums aged in ex-bourbon American oak from October 2009 to July 2012, blended in April 2019 and left to marry, then laid in French oak ex-cognac casks until bottling in June 2022 — around eight years total — at 49.6% ABV with no flavorings, colorants, or sweeteners. The Lone Caner found every issue he had with the 40% Zinfandel edition addressed here: the same quality, boosted and given teeth, and a rum even jaded cask-strength connoisseurs should give a serious look. RumX's tasters found green apple, sour cherry, and apricot with nutmeg, red pepper, vanilla, and milk chocolate on the nose, then spicy wood, honey, and a very intense finish — a very round story with the cognac barrel, and better than the sherry edition. Expect brown sugar, dried fruit, grape-and-honey cognac notes, and French oak over a clean Puerto Rican base, with the proof carrying everything. Honest note: it's a Spanish-style column rum, refined rather than funky. For a serious Rum Old Fashioned or neat, it's the best thing Don Q makes.
