Zinfandel is the wine cask almost nobody uses for rum — and Got Rum? found Don Q's incredibly different from anything else in the portfolio. Destilería Serrallés has made rum in Ponce, on Puerto Rico's south coast, since 1865, six generations of one family, and its Serrallés Collection explores finishes in port, sherry, vermouth, cognac, and here, California Zinfandel. Released in March 2023 alongside the Port Cask, it's molasses-based column rum aged in ex-bourbon American oak from October 2009 to July 2012, blended at the end of 2018, and rested in Zinfandel casks until bottling at 40% ABV in September 2022 — with no flavorings, colorants, or sweeteners. Paul Senft at Got Rum? found the first sip a fine balance of deep Madagascar vanilla and robust fruit and berry, then a tango between the rum's caramel, vanilla, and toasted-oak tannin and the cask's blackberry, cherry, fig, dried cranberry, and apricot, with allspice and anise drifting underneath — well-balanced, and one to sip neat or with a single cube. Honest note: The Lone Caner, who loved the 49.6% Cognac edition, found the Zinfandel's 40% proof held it back — it's the gentler, more approachable sister, and enthusiasts who want the teeth should reach for the Cognac. For a fruit-forward Rum Old Fashioned, a Manhattan riff, or a neat pour for a red-wine drinker crossing into rum, it's Ponce's most unusual cask.
